Molasses Spice Cookies

Ingredients:

1½ cups (375g) butter
2 cups raw sugar
2 large eggs
1/2 cup molasses
4 cups whole wheat flour
4 teaspoons bicarb soda
1 teaspoon salt
3 teaspoons ground cinnamon
4 teaspoons ground ginger
2 to 3 teaspoons ground cloves
1½ cups organic raisins (optional)

Heat the oven to 190°. In a large bowl, cream the butter and sugar for about 3 minutes. Beat in the eggs and molasses until well blended. Mix in the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg until well combined. 
Stir in the raisins if you're using them. Roll into balls and place on a greased cookie sheet. Bake about 15 to
 18 minutes. For crunchier cookies, bake them a few minutes longer. Transfer to a wire rack and cool 
completely. Store cookies in an airtight container for several days or freeze.
